Apple & Sage Traybake
Golden chicken, autumn vegetables and sweet apple in one cosy roasting tin
A simple harvest supper of chicken, potatoes, squash, carrots and apple roasted together with sage and a gentle honey-mustard glaze. Everything cooks in one tray, filling the kitchen with the warm, savoury scents of an autumn evening.

Ingredients
- 4 boneless chicken breasts
- 500g baby potatoes, halved
- 2 carrots, cut into chunky pieces
- ½ butternut squash, peeled and cut into chunks
- 2 eating apples, cored and cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon clear honey
- 1 tablespoon wholegrain or Dijon mustard
- 1 teaspoon dried sage, or several fresh sage leaves
- ½ teaspoon dried thyme
- ½ teaspoon onion granules
- Salt and black pepper, to taste
- Optional: a small splash of chicken stock
Method ♡
- Preheat the oven to 200°C, 180°C fan, or Gas Mark 6.
- Place the potatoes, carrots and squash into a large roasting tin.
- Drizzle with 1 tablespoon of the olive oil and sprinkle over the sage, thyme, onion granules, salt and pepper.
- Toss everything together and roast for 20 minutes.
- Meanwhile, mix the honey, mustard and remaining tablespoon of olive oil.
- Remove the tray from the oven and add the chicken breasts and apple wedges.
- Spoon the honey-mustard mixture over the chicken and vegetables.
- Add a small splash of chicken stock to the base of the tray if you would like a little extra cooking juice.
- Return to the oven for a further 20–25 minutes.
- Check that the chicken is fully cooked through and the vegetables are tender and golden.
- Leave the tray to stand for about 5 minutes before serving.

Cottage Notes ♡
- Cut the vegetables into roughly similar-sized pieces so they cook evenly.
- Add the apple halfway through so it softens without disappearing completely.
- A small splash of stock creates lovely juices for spooning over the finished meal.
- Parsnips can replace some of the carrot or squash if you have them.
